My favorite part of summer is always the fresh garden vegetables. A habit I picked up from my grandmother, is eating a cucumber or a tomato over the sink with a salt shaker and sprinkling salt on every bite. At my grandmother’s house it is really a calm simple moment for me looking out the window at the birds in the feeder with salty tomato juice dripping down my chin.
This habit is the sole reason I will insist on a window above my kitchen sink in my dream house. Sean and I are looking at real estate and a place to settle down soon. Of course the kitchen is the most important room for me! I think the window above the sink is what I feel will keep me connected to my mother and grandmother who taught me so much about putting love into food.
This salad makes a fabulous side, lunch or a perfect addition to greens.
- 2 cups cooked quinoa
- ½ cup chopped parsley
- ½ cup chopped cilantro
- 1 medium tomato, diced
- 1 Japanese cucumber, diced
- 1 lemon, juiced
- 2 tablespoons sherry vinegar
- 4 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon fresh ground black pepper
- Mix all ingredients together in a bowl until well incorporated. Taste and adjust salt and pepper to your liking.
