Papaya Mint Granola Bowl – Meatless Monday

Papaya Granola Bowl Growing up, I would wake up on Sundays to trumpets sounding from the CBS Sunday Morning theme song. My mother always watched the program while she was making scones or muffins or cleaning and picking up the house. As an adult I now copy my mother’s habit and watch the program every weekend I can and I think of her.  Papaya Granola Bowl CBS Sunday Morning is a zen moment for me in a busy week. It’s calming vistas, interesting stories, and poetic take on journalism is unlike any other news show. My favorite part is the moment in nature at the end of the show where there is no music just scenes of deer, or ducks or Aspen trees. It reminds me to look around and enjoy the beauty of my surroundings and to take a quiet moment every once in a while in this crazy life. Papaya Granola Bowl Sean adores papaya and living in Hawaii we are lucky to always have delicious papayas available. I have never been a huge fan of the fruit but I keep trying it every time Sean cuts one open and they have grown on me. This granola bowl in particular was fantastic! It was juicy, citrusy and paired perfectly with crunchy granola. The next time you can find some fresh papayas in your market try them as a bowl for granola or cereal. I am sure this would be fantastic filled with yogurt or cottage cheese for a vegetarian moment. Try a papaya filled with ice cream for a tropical dessert option!

Papaya Mint Granola Bowl

Use papaya as a bowl for your favorite cereal or granola.
Serves: 2
  • 1 papaya
  • ½ lemon or lime
  • 1 cup granola, divided
  • 1 banana, sliced
  • ¼ cup blackberries, or your favorite fresh berry
  • 2 tablespoons chopped fresh mint leaves
Optional Toppings
  • honey
  • agave
  • yogurt
  • coconut whipped cream
  1. Cut papaya in half, remove seeds with a spoon and discard.
  2. Squeeze lemon or lime over both halves of papaya.
  3. Fill papaya cavity with ½ cup of granola for each half.
  4. Top both with sliced banana, blackberries, and chopped mint.
  5. Enjoy!
